Whole Roasted Baby Cauliflower

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

  • 1 small head cauliflower with leaves
  • 2 gallons water
  • 1/4 cup course sea salt or kosher salt
  • 1 tablespoons best-quality extra-virgin olive oil, divided
  • serve with tahini, non-obligatory
  • Preheat oven to 550°F with oven rack in middle of oven. Trim stem of cauliflower, preserving leaves intact, so it’ll sit stage on a sheet pan.

  • Bring 2 gallons water to a boil in a big pot over excessive warmth. Stir in salt till dissolved.
